My Grandma’s Secret Apple Cake

There’s nothing like grandma’s cakes, and this is one of the best. A soft and moist apple cake, topped with caramelized apples and filled with tender apple chunks inside—so good you’ll be reaching for a second slice.

Ingredients

• 2 large apples (Golden or Renette, about 350 g peeled)
• 120 g all-purpose flour (Farina 00)
• 80 g sugar
• 2 medium eggs
• 50 ml milk
• 50 g melted butter (or 40 g vegetable oil)
• ½ packet baking powder (about 8 g)
• Zest of ½ lemon
• Pinch of cinnamon

Instructions

1. Prepare the apples: dice one and slice the other thinly.
2. Whisk eggs and sugar until pale and fluffy.
3. Add melted butter (or oil), milk, and lemon zest.
4. Fold in sifted flour, baking powder, and cinnamon.
5. Mix in the diced apple.
6. Pour into a greased and floured 20 cm pan.
7. Arrange apple slices on top in a circular pattern.
8. Bake at 180°C (350°F) for 35–40 minutes.
