– 2 cups Cherry tomatoes, halved
– 1 cup Mushrooms, sliced
– 1 Onion, chopped
– 2 cups Fresh spinach, roughly chopped
– 200 g Bacon, cut into bite-sized pieces
– 4 Eggs
– 2 tbsp Olive oil
– Salt, to taste
– Pepper, to taste
– Fresh herbs (basil or parsley), for garnish (optional)

Instructions
