The OG Bruschetta – Classic Italian Appetizer

A simple yet iconic combo that shines "only" with top-quality ingredients. Bruschetta is effortless— but nail these steps, or it’s a flop.  
Growing up, this was my summer staple: ready in under 5 minutes, impossible to mess up. But pay attention—details matter!

1) The Bread

Skip fresh bread —opt for a 2–3-day-old loaf. Why? Fresh bread is too soft; slightly stale bread toasts up crispier and holds toppings better. Toasting tip: No oil or butter needed! Just char it dry in a pan, oven, or toaster until golden (not burnt— trust me).

2) The Garlic

Here’s the trick: - Peel a clove and rub it gently on the toasted bread. - You’ll get mellow garlic flavor without the aggressive punch of raw chunks.

3) The Tomatoes

Prep:  
- Slice them into quarters with a serrated knife (clean cuts, no squishing!).  
- Salt immediately (and pepper if you like)—this amps up their juiciness.

4) The Oil

Extra-virgin olive oil (EVOO) — non-negotiable. Since it’s uncooked, splurge on the good stuff.
- Add 2 tbsp to the tomatoes, mix well.

5) The Oregano

Bruschetta demands dried oregano —preferably from your pantry stash. Go wild if you’re a fan! Toss it into the tomato mix. (the one from the store is perfectly fine)

6) Assembly

EAT IMMEDIATELY. The longer the tomatoes sit on the bread, the soggier it gets. Last but not least: - Drizzle the tomato juices over the bread before topping.

Ingredients

– 4 slices Rustic bread (1.5cm thick) Slightly stale (2-3 days old)
– 250 g Cherry tomatoes Halved or quartered
– 1 clove Garlic Peeled for rubbing
– 3 tbsp Extra-virgin olive oil High quality, for dressing
– ½ tsp Salt
– ½ tsp Black pepper

Instructions

  1. Toast bread: Dry-toast in a pan, oven, or toaster until golden and crisp (no oil needed).
  2. Garlic rub: Cut garlic clove in half, rub gently on warm toast.
  3. Prep tomatoes:Halve or quarter cherry tomatoes. Mix with olive oil, salt, and pepper. Let sit 5 mins.
  4. Assemble & serve: Spoon tomatoes onto bread just before serving to keep bread crisp.Drizzle with extra oil if desired.
